In a bowl combine:
1 finely chopped white onion
6 finely chopped tomatoes
1 cucumber, finely chopped
2 tablespoons olive oil
few sprigs of chopped italian parsley
squeeze half lemon juice
salt and cracked black pepper
Mix together and serve as a tasty side dish.
